Basque Burnt Cheesecake

Bega Cream cheese 525g
Caster sugar 100g
Vanilla 5g
Whipping Cream 450g
Eggs 3
Yolks 4
Salt 1g
Cake Flour 10g


  1. Beat softened Bega Cream Cheese, salt and sugar in a mixer until soft & dissolved.
  2. Slowly add cream and vanilla, continue beating until smooth.
  3. Slowly add eggs until fully combined.
  4. Remove bowl from mixer add sifted flour and salt by hand.
  5. Pour into a lined 8” cake tin, place in oven and bake in a pre-heated oven at 220c for 40 minutes.
  6. Ensure the cheesecake is evenly coloured and wobbles when tapped.
  7. Place in the fridge to cool and set overnight before removing from tin.
